Chocolate Chip Oatmeal Cookies

My moms favorite cookies are Chocolate Chip Oatmeal Cookies – she found this recipe in a newspaper I believe and shared it with me.  I wanted to bake and decided to make a spring version by using the Nestle Springtime chips (I found them in the clearance section at Walmart!).  They are quite easy to make and if you bake at all you most likely have all the ingredients in your house already.

Ingredients:

  • 1 cup margarine – softened (I find that tub margarine works best – I used Olivio Light)
  • 1-1/4 cups brown sugar packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 tbps milk
  • 2 tsp vanilla
  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2-1/2 cups oatmeal
  • 1 package chocolate chips

Preheat your oven to 375º.  I am in love with my convection oven – before I could only cook one pan of cookies at a time.  Now I can bake two at the same time – this is great as it cuts the amount of time I spend baking cookies in half.

In a large bowl mix the margarine, brown sugar and granulated sugar.  Next mix in the eggs, milk and vanilla.  Add the flour, baking soda and salt and mix until a dough forms.  Mix the oatmeal into the dough and finally mix in the chocolate chips.  I use a cookie scoop and place 12 cookies per sheet.  Bake 10-12 minutes until lightly browned.

These cookies are great if you like oatmeal.  My hubby isn’t a fan of cookies with oatmeal so we don’t make these often.  The kids love making basic cookies as we mix them by hand instead of using the stand mixer which means they get to be more involved!  Please feel free to share any family cookie recipes you have – I would love to feature them in my blog.
