Fall Apples become Yummy Applesauce for the YearFall Apples become Yummy Applesauce for the Year

Its that time of the year – the leaves are turning beautiful colors, the air is crisp, and the apples are ripe!  Today I’m making and canning applesauce.  I’ll walk you through my process and share pictures as well as link to the recipes I use.  Follow along to make your fall apples become yummy applesauce for the year.

Gather Canning Accessories

  • Jars
  • Jar Lids
  • Water bath canning pot with rack
  • Large pot to cook applesauce
  • Immersion Blender (or standard blender)
  • Apple peeler/corer
  • Knife

Instructions

  • I store my jars and canning pots in the basement so I wash them each time I get them out.  My first step is to wash all equipment that I need.
  • Place the lids you will need in a bowl with warm water
  • Fill your water bath canning pot with water
  • Place water bath canning pot on stove and start heating
  • Peel and core apples (place in large pot with water and lemon juice mix to keep from browning)
  • Drain the apples from the lemon water mix and add a small amount of fresh water
  • Place large pot with apples on stove and turn burner to medium heat – stir occasionally to make sure apples aren’t sticking
  • Bring to a boil – boil for 5-20 minutes until apples are starting to get mushy
  • Turn off heat
  • Puree with the immersion blender in the pot (if you are using a regular blender transfer batches until you have blended all of the applesauce)
  • Add sugar (optional – I add 1/4 cup of brown sugar) and lemon juice (1/4 cup)
  • Turn on heat and bring to a boil again
  • Ladle hot applesauce into jars
  • Wipe the mouths of the jars to ensure they are clean, place lid, screw on metal band
  • Place jars into the boiling water bath and process for 20 minutes
  • Remove the jars from the water bath and place on towel to cool
  • After 24 hours check lids to ensure they are sealed (they should be firm to touch not flexible)
  • Label jars and store

I used the same base recipe for my strawberry applesauce and then cooked the strawberries separately.  I put half of the second batch in jars as unsweetened applesauce and added the strawberries to the other half.

The kids will enjoy this bounty for most of the year.  I will also use the applesauce in some recipes to make them healthier.  Have you ever canned before?  As luck would have it today was the most humid day we’ve had in a while.  I shouldn’t expect anything else when I decide to can though is what I’ve realized!
