Kids in the Kitchen: Pumpkin Chocolate Chip Muffins

It’s that time of the year when its perfectly acceptable to have pumpkin flavored everything foods!  I personally think that pumpkin flavored goodies are fine any time of the year but right now we are in the “socially” accepted time window 🙂  The kids and I decided to bake some yummy pumpkin chocolate chip muffins for their teachers prior to the first day of school.

My kids love pumpkin – they will eat it straight from the can if I let them!  I wait to open the can until right before we add it to the recipe to keep them at bay.  The kids love helping and are great assistants in the kitchen.  I love watching their culinary skills develop as they get older.  For this project the kids even helped gather the ingredients for me.

Ingredients
  1. 4 eggs
  2. 1 cup oil
  3. 1 can (15oz) pumpkin (puree - not pumpkin pie mix)
  4. 2/3 cup water
  5. 1 tsp salt
  6. 1 tsp cinnamon
  7. 1 tsp nutmeg
  8. 1 tsp cloves
  9. 3-1/3 cups flour
  10. 3 cups sugar
  11. 1 tsp baking soda
  12. 1 bag of chocolate chips (I prefer minis)
Instructions
  1. Preheat the oven to 400 degrees. Grease muffin tins or use liners. Put all wet ingredients (eggs, oil, pumpkin, water) in a bowl and mix together thoroughly. Add the sugar and mix until fully combined. Next add the salt, cinnamon, nutmeg, cloves, baking soda and flour. Mix until just combined. Finally add the chocolate chips and stir. Fill muffin tins 2/3 of the way up and place in oven. Bake 15 to 18 minutes or until a toothpick inserted in the center comes out clean.

My mom passed the recipe down to me and it came from the daycare she worked at prior to that.  My only modification from the original recipe is the addition of the chocolate chips.   These muffins are a hit each time I make them.  This year for Christmas my mom also got me an amazing Wilton 48 cavity mini muffin pan which is perfect for this recipe!
