Cream Cheese Apple Coffee Cake

We just picked two peck bags of apples at Treworgy Family Orchards and I wanted to post a recipe today that included some of those awesome apples!  Our recipe today comes from Yammie’s Noshery.  The only modification to the recipe I made was the addition of 1/4 cup of oatmeal in the streusel topping.

Cake Ingredients:

  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/2 tablespoon vanilla
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups chopped apples (chopped small)

Cream Cheese Layer Ingredients:

  • 8 oz. softened cream cheese
  • 1 teaspoon vanilla
  • 3 tablespoons white sugar

Streusel Ingredients:

  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 6 tablespoons cold butter
  • 1/4 cup of oatmeal (***my addition)

Instructions:

  • Preheat oven to 350°
  • Grease 8×8″ square pan
  • In stand mixer combine butter, brown sugar, and white sugar – beat until fluffy.

  • While this is mixing chop up apples (I used three medium Cortland apples)
  • Add the egg, oil, and vanilla and mix until combined
  • Add the flour, baking soda, baking powder, salt and cinnamon directly to the stand mixer – mix until fully combined
  • Add the already chopped apple and mix briefly

  • Spread the batter into the greased pan
  • Wash stand mixer and paddle to make cream cheese layer
  • Combine cream cheese, sugar and vanilla – mix on high speed for 2 minutes

  • Spread cream cheese mixture over cake layer in pan (this was difficult for me – the mixture didn’t fully cover the cake layer)
  • In a bowl combine all streusel ingredients (white sugar, brown sugar, flour, ***oatmeal***, cinnamon, baking powder, salt, and cold butter) – use a pastry cutter or fork to mix until fully combined.

  • Sprinkle streusel over the top of the cream cheese layer

  • Bake for 45 minutes or until toothpick comes out clean
  • Store in refrigerator after fully cooled

  • Although this tasted yummy, it was not fully cooked. The toothpick came out clean, but in recipes like this I feel the uncooked part is scraped off by the streusel topping. I cooked it in a glass pan in a convection oven. Maybe that played a part?

    • The glass pan and convection may have played a part. It was cooked when I did it but each oven cooks so differently. Thanks for trying the recipe!
