Kids in the Kitchen: Adorable Apple Pie Rollups

It’s been a while since the kids and I have had time to having a baking session (too long if you ask me!).  Today we headed back to the kitchen to make Adorable Apple Pie Rollups.  The kids love pie dough so it wasn’t hard to convince them to come help out.  We are currently in the middle of summer but in Maine it won’t be long before the cool air creeps in and this recipe will be perfect for the freshly picked apples of Fall.

Ingredients

Pie Dough (for two crust pie)

  • 2 cups Flour
  • 1 tsp salt
  • 2/3 cup shortening plus 2 tbs
  • 4-5 tbs cold water

Apple Filling

  • 2 apples (peeled and sliced)
  • 1/2 tbsp cinnamon 
  • 1/4 cup brown sugar

Instructions

  • Peel, slice and core 2 apples.
  • Mix cinnamon and brown sugar together.
  • Set apples and cinnamon sugar mixture to the side.

  • Preheat the oven to 425º.  
  • Mix the flour and salt.  
  • Cut in the shortening until the dough starts to form small pea sized pieces (I use my stand mixer for this but you could use a fork or pastry knife).  
  • Slowly add the water until you reach the right consistency (the dough should form a ball but not be sticky).  
  • Cut the dough into quarters.  
  • Flour a spot on the counter for each of the kids and give them a piece of the dough.  
  • Have each child roll their own dough (depending on your child’s age you will probably have to help with this step).
  • When the dough is thin and in a circular shape use a pizza cutter to cut the dough into 8 sections.
  • Spread a thin layer of cinnamon sugar over the pie dough, top with an apple and roll up.

  • Place on a cookie sheet.
  • Repeat until all of your apple slices are gone.
  • Use the remaining dough to make Cinnamon Things.
  • Bake 20-25 minutes until golden brown.
