Not So Sinful Chocolate Banana Bread
I love baking – it is a form of stress relief for me. The act of mixing ingredients and creating something that brings happiness to others brings me a sense of euphoria. The issue with my love of baking is that the calories that make these baked goods taste fabulous aren’t always very good for you. Today I modified a recipe for Double Chocolate Banana Bread from Erica’s Sweet Tooth. I substituted half of the butter with unsweetened applesauce and reduced the amount of sugar and chocolate chips. I know the recipe still isn’t “healthy” but it is a healthier option.
- 3 medium ripe bananas
- 1/4 cup melted butter
- 1/4 cup unsweetened applesauce
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup flour
- 1/2 cup cocoa powder
- 1/2 cup chocolate chips
- 2 tbs mini chocolate chips
- Preheat the oven to 350.
- Grease one loaf pan.
- Peel and mash the bananas.
- Add the butter, applesauce, brown sugar, egg, and vanilla to the bananas and mix.
- Add the baking soda, salt, flour and cocoa powder and mix until thoroughly combined.
- Mix the chocolate chips into the batter.
- Pour the batter in the loaf pan, sprinkle the mini chocolate chips on top.
- Bake for roughly 55 minutes (depending on oven).
- Allow to cool in pan for 5-10 minutes.
- Remove to wire rack to cool completely.
Instructions
- Preheat the oven to 350°.
- Grease one loaf pan.
- Start by peeling and mashing the bananas (we used a potato masher but you could use a fork).
- Next add the butter, applesauce, brown sugar, egg, and vanilla and mix until combined.
- Cool in pan for 5-10 minutes.
- Remove from pan and cool completely on a wire rack.
The Not So Sinful Chocolate Banana Bread turned out great and disappeared quickly! The healthy substitutions were not noticeable at all.
