Pumpkin Chocolate Chip Whoopie Pies
A few weekends ago we had a yard sale and I decided that I wanted to see if I could make a few extra bucks selling Whoopie Pies. I made both regular chocolate and pumpkin chocolate chip. Today I’m going to share the recipe I use for my pumpkin chocolate chip whoopie pies.
INGREDIENTS
Pumpkin Chocolate Chip Whoopie Pies:
- 1 cup shortening
- 2 cups packed brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 3-1/2 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1-1/2 cups canned pumpkin
- 1 cup mini chocolate chips
DIRECTIONS
Preheat the oven to 400º. In stand mixer cream shortening and brown sugar. Add eggs one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda, salt, cinnamon, and ginger. Add to creamed mixture alternating with pumpkin. Add chocolate chips. Use a cookie scoop to make evenly shaped dough balls on a baking sheet. Place baking sheet in oven and bake roughly 10 minutes.
INGREDIENTS
Filling:
- 1/2 cup butter
- 1/2 cup crisco
- 4 cups confectionery sugar
- 1 teaspoon vanilla
- milk to reach desired consistency – I wouldn’t start with more than a tablespoon – add from there
DIRECTIONS
While the whoopie pie cakes are baking make the filling. In stand mixer cream butter and crisco. Slowly add the confectionery sugar. When the sugar is all mixed in add vanilla. Next add one tablespoon of milk and mix thoroughly. Add more milk to reach desired consistency (if the filling ends up too runny you can add more sugar).
After the whoopie pies cool I use the same cookie scoop for filling. I place on scoop of filling on one whoopie pie cake and sandwich it with another. Repeat until all cake pieces have been made into whoopie pies. Then try not to eat them all in one sitting!!

I love the plain chocolate cakes whoopie pies. When I make them, I use peppermint flavoring. Defin. going to try yours tho!
I have made plain chocolate ones with mint filling as well – they are very yummy! The only problem is hubby doesn’t like mint so I don’t make them often.
