I’ve missed you guys! Sorry that I have been missing in action – we have had a rough few weeks in our house and I just couldn’t muster up the emotional energy needed to do many fun activities with the kids let alone photograph or blog about them. Our wonderful dog Tool passed away last Friday and was very ill in the week and a half leading up that. I will post a separate blog about him and his final weeks at a later date.
Today we are going to talk about the best pot roast ever! I like a good pot roast but had stopped making it as my hubby always said the meat was too bland. I decided to search on Pinterest to find a new recipe and found one at Table for Two called Mississippi Roast. I have decided to call it the best pot roast as I think that it is!
The Best Pot Roast
- 1 3pound chuck roast (mine was 2.5) – any roast will work for this
- 1 1ounce packet of dry ranch seasoning mix
- 1 1ounce packet of dry au jus gravy mix
- 6 tbsp. unsalted butter
- ¼ cup water
- 5 or 6 pepperoncini
This is one of the easiest and tastiest meals I have ever made in my crock pot. Pour the 1/4 cup of water into the crock pot insert. Place meat in on top of the water. Sprinkle the ranch seasoning mix on top of the meat, next sprinkle the au jus gravy mix on top. Sit the 6 tablespoons of butter on top and place the pepperoncini’s around the meat. Set the crockpot on low for 8 hours and forget.
Roughly thirty minutes prior to serving shred the meat and let it sit in the gravy on warm until time to serve.
The first time we had this I served it with mashed potatoes. This time we had it as sandwiches. You could also add vegetables into the crock pot for the last two to three hours of cooking – I think that’s what I will try next time!
